Baking Powder


Mascarpone cheese

(And if you really wanna hurt yourself - Whipped Cream)

Powdered Sugar


How to make it:


Start mixing:

One egg with 150 ml milk

Add 1 cup whole milk

Add and stir 200 gm. flour, then add 2 tbsp of cocoa

Add 1/2 tbsp baking powder

Bake 15 mins. at 200 C. (400 F.)

Once it's baked, let it rest until cool

In the meantime, mix approx. 250 gm. of mascarpone cheese (you can also use sour cream), and 300 gm of Nutella.

Cut the cake into two layers and remove the top.

Spread the cheese and Nutella mixture over the bottom layer, and place the top back on the cake.

Refrigerate for a couple of hours.

Before serving, sprinkle the top with powdered sugar.

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
1 large coffee mug
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 3 minutes at 1000 watts (high). The cake will rise over the top of the mug, but don't be alarmed!

Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to feel slightly more virtuous).

A tip from a friend who made this, she says to make sure you use a mug that is at least twice as high as it is wide, or you're going to end up cleaning your microwave!


Five-Minute FUDGE

 This is a recipe that my mother used to make when us kids wanted fudge and she didn't want to spend hours making the traditional version. This recipe will make one average size deep-dish glass pan.




2/3 cup milk

1 1/2 cups sugar

2 cups marshmallows

1 1/2 cups nuts

1 tsp. vanilla

1 1/2 cups semi-sweet Chocolate Chips




Combine the milk and sugar in a saucepan, bring to a boil. Cook for five minutes. Remove from heat. Add other ingredients and stir until marshmallows have melted. Pour into greased pan and leave until cool to the touch. Cut into squares and serve.
